Skymeat Tartar

Ingredients for 4 people

Tartar

 

120 g red SKYMEAT 

100 ml water

1 tbsp olive oil of good quality 

Marinade

 

2 shallots

2 tbsp oil

2 pickles

2 tbsp capers (finely chopped)

2 leveled tbsp of pickled ginger

1 tbsp tomato ketchup 

2 tbsp sweet-and-sour sauce (Asia) 

Juice from one lemon

1 tsp sweet paprika

1 tsp smoked paprika 

Salt, pepper 

You can also add a few drops of agave syrup


Here’s how you do it: 

 

Put the SKYMEAT, the water, and the oil into a bowl and knead until you get a compact dough. 

Set it aside for 10 minutes, then cut it up into tiny cubes. 

Add the other ingredients and mix well.

 

Put the bowl with its contents in the fridge for one hour to let the flavors blend.

Before serving, add salt and pepper according to your taste.
